Preheat oven to 350 degrees F (180 degrees C).

Grate the Zucchini (2) and drain the excess water with a cheesecloth.

In a large bowl, combine grated Zucchini, Aged Goat Cheese (1/2 cup), Red Onion (1/2), McCormick® Garlic Powder (1 tsp), Quinoa Flour (1/2 cup), Dried Rosemary (1 tsp), Dried Basil (1 tsp), Sea Salt (1 pinch), and Ground Black Pepper (1 pinch). Form into patties.

Melt Coconut Oil (1 tsp) over medium heat in a large pan. Cook fritters for 5 minutes and flip. Cook for another five. Be careful not to let them burn. You just want to sear the outside.

Place on parchment lined or greased baking sheet. Bake in oven for 20-25 minutes.
