Cook the Orzo Pasta (1 kilogram) in boiling water with salt and I like to cook my pasta 1 minutes less than what’s indicated in the package so it’s aldente.
Chop and deseed the Roma Tomato (2), Cucumber (1), and Red Chili Pepper (1).
In a large bowl, combine the chopped tomatoes, cucumber, red pepper, Cherry Tomato (1 cup), Green Olives (1 cup), Fresh Basil (1 cup), Fresh Chives (1 cup), Fresh Dill (1 cup), Fresh Parsley (1 cup), Fresh Cilantro (1 cup), pasta, Green Peas (1 cup), Sweet Corn (2 cup), and Salt and Pepper (to taste) and mix well.
To season, add Extra-Virgin Olive Oil (1/2 cup), Salt and Pepper (to taste), and Lemon (1 1/2) and mix well. Serve and enjoy!
