Preheat to 425 degrees F (220 degrees C).
In a bowl, mix the Bone-In Chicken Thighs (6), Olive Oil (1/4 cup), Herbes de Provence (2 tablespoon), and Ground Black Pepper (1 teaspoon).
Add the Sweet Potato (1 pound) and Bell Pepper (2) to a sheet pan or baking dish. Drizzle with 2 tablespoons of olive oil. Mix well.
Top with the Orange (1), then top each orange slice with one piece of chicken.
Bake for 45 minutes.
Tent and let rest 5-10 minutes.
