Step 1
Prepare slaw. Using a box grater shred the Apple (1/2) , Carrot (1) , and Red Cabbage (1/4) or place all ingredients into a small food processor to shred.
Step 2
To make the dressing, whisk together Grainy Dijon Mustard (2 Tbsp) , Extra-Virgin Olive Oil (1/4 cup) , Dark Maple Syrup (1 Tbsp) , Garlic Powder (1/2 tsp) , and Sea Salt (to taste) in a bowl or add the dressing ingredients to the chopped ingredients and blitz together. Set aside.
Step 3
Mash Avocado (1/2) onto one side of Rye Sourdough (1 slice) .
Step 4
Place spoonfuls of slaw onto the other piece of Rye Sourdough (1 slice) .
Step 5
Top with Roasted Chicken (1/2 cup) and Broccoli Sprouts (1 handful) . Enjoy!
