Step 1
In a pan over medium heat, add
Olive Oil (2 Tbsp)
. Add in
Onions (1/2 cup)
,
Bay Leaf (1)
, and
Curry Powder (1 Tbsp)
. Stir well.
Step 2
Add
Red Wine (1/4 cup)
and
Tomato Paste (1 Tbsp)
. Season with
Salt (to taste)
and
Ground Black Pepper (to taste)
. Mix well and let it simmer for 5 minutes. Set aside.
Step 3
Into a measuring jug, using a strainer, strain the sauce mixture. Discard the solids and set the sauce aside. Allow it to cool.
Step 4
In a small bowl, add
Crème Fraîche (1 cup)
,
Dried Apricots (1 Tbsp)
, and
Mayonnaise (1 cup)
. Top with the sauce and mix well. Set aside.
Step 5
In a pot, add
Chicken Stock (2 cups)
and
Chicken Breast (1)
. Poach for 10 minutes.
Step 6
After 10 minutes, discard the chicken stock. Leave the chicken to rest and allow it to slightly cool.
Step 7
Cut the chicken into chunks. Put the chicken in a small bowl, add the cream sauce mixture and mix well.
Step 8
To assemble, top the
Little Gems Lettuce (to taste)
with the chicken sauce mixture. Serve immediately.
