Gazpacho is a very refreshing soup, typical in Andalucia. There are lots of ways to make it. This is a very simple recipe that a friend from Sevilla gave to me, so I hope you enjoy it as much as do!

Cooking Instructions

Step 1
Quater the Tomatoes (3.3 lb) .
Step 2
Deseed and roughly chop the Green Bell Pepper (1) and the Yellow Bell Pepper (1) .
Step 3
Roughly chop the Carrot (1) .
Step 4
Roughly chop the Cucumber (1/2) .
Step 5
Add all the vegetables to a bowl and blend with a stick blender. You can also put everything in a regular blender.
Step 6
Strain through a colander to smooth out the gazpacho, blending as you go.
Step 7
And Olive Oil (to taste) , Apple Cider Vinegar (to taste) , Salt and Pepper (to taste) , and Ground Garlic (to taste) to your taste.
Step 8
Blend everything on low speed. Serve and enjoy!
