As my regular readers know, I love sweets, desserts, and cakes, but I do not like to prepare them. So when I do prepare a sweet dish, it must be quick, simple and easy, like this delicious Blueberry Cake!

Cooking Instructions
1.
Preheat oven to 350 degrees F (180 degrees C).
2.
Add Butter (to taste) and All-Purpose Flour (to taste) to a springform.
3.
Whisk All-Purpose Flour (1 1/3 cups), Baking Powder (1/2 tsp), and Salt (1 dash) in a bowl until combined.
4.
Beat Butter (1 stick) and Granulated Sugar (3/4 cup) for a couple of minutes, then beat in Eggland's Best Classic Eggs (2) and Vanilla Extract (1/2 tsp), add the flour mixture and Milk (3/4 cup), stir until smooth.
5.
Add 1/3 of the batter mixture to the springform.
6.
Mix the remaining 2/3 batter with Fresh Blueberries (4 cups), fill into the springform.
7.
Bake in the oven for 1 hour.
8.
When the cake is baked through, remove from the oven. Let cool for 10 minutes before removing springform.
9.
To serve, sprinkle with Caster Sugar (to taste) and more blueberries if you want, and Whipped Cream (to taste).
Author's Notes
Use any fruit you might like and have available, such as any berries, stone fruit, halved grapes, even bananas, etc. Just make sure you don’t overcook the cake. Unfortunately, the old toothpick test does not work for this type of cake, so you must rely on your touch.
