step 1
Preheat the oven to 350 degrees F (180 degrees C).

Trim off the ends of the Zucchini (2), and then cut each zucchini in half lengthwise. Using a small spoon scoop out the seeds and a little bit of the flesh leaving about 1/4–1/2 inch of flesh on the zucchini.

Place the prepared zucchini scooped outside up in a baking dish with about an inch of water covering the bottom of the pan. Cover with foil and bake for about 18 minutes.

Adjust oven temperature to 375 degrees F (190 degrees C).

Add 1/2 cup of Shredded Mozzarella Cheese (1 cup) to the zucchini boats, then top with Marinara Sauce (1/2 cup), and then the other 1/2 cup mozzarella.

Sprinkle with McCormick® Garlic Powder (1/4 tsp), then add Mini Pepperoni (1/3 cup). Optionally, top with Jalapeño Pepper Slices (to taste), Black Olives (to taste), Bell Peppers (to taste), Mushrooms (to taste), Tomatoes (to taste), Crushed Red Pepper Flakes (to taste), or any other desired toppings.

Cover with foil and bake in the oven for 10 minutes.

Remove foil, then cook uncovered for additional 7-8 minutes or until zucchini is tender. Top with Fresh Parsley (to taste) and enjoy!
