Preheat oven to 400 degrees F (200 degrees C).
Step 2
Arrange Assorted Color Bell Peppers (3) and Yellow Onions (2) on a parchment-lined sheet tray. Drizzle with olive oil and a pinch of salt.
Step 3
Bake in the oven for 20 minutes.
Step 4
Toss the Shrimp (1 lb) with Taco Seasoning (1 Tbsp) , Olive Oil (1 Tbsp) , and Salt (1/2 tsp) .
Step 5
Add the seasoned shrimp to the same sheet pan, return to the oven and bake for 5 more minutes.
Step 6
Meanwhile, toast the Flour Tortillas (8) in the oven, or wrap them in a damp paper towel and microwave for 30 seconds.
Step 7
Serve with Avocado (1) , Salsa (to taste) , a dollop of Sour Cream (to taste) , and a sprinkle of Fresh Cilantro (1/4 cup) .
