Step 1
In a large pot, heat
Olive Oil (2 Tbsp)
over medium-high heat and add in the
Chicken (1 lb)
. Brown and add
Cajun Seasoning (1 Tbsp)
. Cook through and stir occasionally until spices become fragrant; about 2 minutes.
Step 2
Add the
Green Bell Peppers (2)
and
Yellow Onion (1)
and cook until they become translucent and soft; about 3-4 minutes.
Step 3
Stir in the
Garlic (2 cloves)
and cook for 1 minute to get the raw taste of it out.
Step 4
Once cooked out, toss in
Penne Pasta (3 cups)
,
Chicken Broth (4 cups)
, and
Diced Tomatoes (1 can)
. Let it come to a boil and stir occasionally until pasta is Al dente and the sauce is thickened and reduced by half, about 15 minutes.
Step 5
Remove from the heat and add the
Cream Cheese (3/4 cup)
. Make sure the heat is off when adding the cream cheese or it will split. The sauce may look runny, but it will thicken once cooled.
Step 6
Season with
Salt (1/2 Tbsp)
.
Step 7
Optionally, garnish with
Fresh Parsley (to taste)
.
