Place a medium pot filled halfway with
Oil (as needed)
over medium heat and let the heat reaches 350 degrees F (180 degrees C).
In a large mixing bowl; add in
Panko Breadcrumbs (2 cups)
Parmesan Cheese (1/2 cup)
Italian Seasoning (1 tsp)
Crushed Red Pepper Flakes (1/2 Tbsp)
, and season with
Kosher Salt (to taste)
Freshly Ground Black Pepper (to taste)
Set up 3 mixing bowls, one with
All-Purpose Flour (1/2 cup)
, one for
Large Eggs (3)
, and one for the Panko mixture.
First, place the
into the flour and dust off the excess flour, then dip into eggs and lastly coat into the panko mixture. Press the zucchini into the panko mixture so that it is evenly coated.
When the heat reaches 350 degrees F (180 degrees C), place 4-5 pieces of the zucchini in the pot and fry until golden brown for about 4-5 minutes. Do this in batches until all the zucchini are done and crispy. Do not overcrowd the pot or the temperature will go too low.
Transfer the zucchini fries to the cooling rack to drain out the excess oil before serving.
Serve immediately, garnished with
Fresh Parsley (2 Tbsp)
or ranch, if desired.
