Step 1
Preheat the oven to 400 degrees F (200 degrees C).
Step 2
Spray a 9x13 baking dish with Nonstick Cooking Spray (as needed) .
Step 3
Bring a large pot of water, add Salt (to taste) and bring to a boil.
Step 4
Cook Rotini Pasta (1 lb) to al dente according to package instructions, about 10-12 minutes. Then drain.
Step 5
In a large bowl, combine cooked pasta, Black Beans (2 cans) , Corn Kernels (1 can) , Red Bell Pepper (1) , Green Bell Pepper (1) , Tomatoes (2) , Taco Seasoning (1 1/2 Tbsp) , Mexican Style Hot Sauce (2 Tbsp) , and Shredded Mexican Cheese Blend (2 cups) .
Step 6
Pour the mixture into the prepared baking dish and spread evenly. Top with remaining Shredded Mexican Cheese Blend (1 cup) .
Step 7
Bake for 15-20 minutes, until warmed through and the cheese is melted.
Step 8
Top with Avocado (1) , Fresh Cilantro (1 Tbsp) , and Scallions (1 Tbsp) . Serve warm.
