to al dente according to package instructions, about 10-12 minutes. Then drain.
In a large bowl, combine cooked pasta,
Black Beans (2 cans)
Corn Kernels (1 can)
Red Bell Pepper (1)
Green Bell Pepper (1)
Taco Seasoning (1 1/2 Tbsp)
Mexican Style Hot Sauce (2 Tbsp)
Shredded Mexican Cheese Blend (2 cups)
Pour the mixture into the prepared baking dish and spread evenly. Top with remaining
Shredded Mexican Cheese Blend (1 cup)
Bake for 15-20 minutes, until warmed through and the cheese is melted.
Fresh Cilantro (1 Tbsp)
Scallions (1 Tbsp)
. Serve warm.
