Preheat the oven to 375 degrees F (190 degrees C). Grease a sheet pan with cooking spray and set aside.

In a skillet over medium heat, heat the Vegetable Oil (2 Tbsp). Stir in Yellow Onion (1) and Celery (1 rib) until soft for about 4-5 minutes.

Continue adding Garlic (2 cloves), Frozen Mixed Vegetables (1 bag), and Roasted Chicken Breast (1 bag). Stir for another minute.

Add Chicken Bouillon Powder (1/2 Tbsp), Salt (to taste), and Ground Black Pepper (to taste). Remove from heat and set aside.

Top each Empanada Dough Shells (16) with 2 Tbsp of the chicken mixture, and a couple of quartered boiled Eggs (3).

Fold round over the filling. Pinch the edges to seal with a fork and brush the top with Eggs (2) wash. Repeat this process with the remaining ingredients.

Bake the empanadas in the oven for 20-25 minutes or until golden brown.

Remove from the oven and serve hot with Sriracha Mayonnaise (to taste).
