Preheat the oven to 375 degrees F (190 degrees C). Grease a sheet pan with cooking spray and set aside.
In a skillet over medium heat, heat the
Vegetable Oil (2 Tbsp)
. Stir in
Yellow Onion (1)
Celery (1 rib)
until soft for about 4-5 minutes.
Garlic (2 cloves)
Frozen Mixed Vegetables (1 bag)
Roasted Chicken Breasts (1 bag)
. Stir for another minute.
Chicken Bouillon Powder (1/2 Tbsp)
Salt (to taste)
Ground Black Pepper (to taste)
. Remove from heat and set aside.
Empanada Dough Shells (16)
with 2 Tbsp of the chicken mixture, and a couple of quartered boiled
Fold round over the filling. Pinch the edges to seal with a fork and brush the top with
wash. Repeat this process with the remaining ingredients.
Bake the empanadas in the oven for 20-25 minutes or until golden brown.
Remove from the oven and serve hot with
Sriracha Mayonnaise (to taste)
