Step 1
Brush
Focaccia Bread (to taste)
with
Garlic Paste (to taste)

Grate the
Asiago Cheese (to taste)

Step 3
Sprinkle with grated asiago cheese, saving some for the spinach.
Step 4
Toast the Garlic and Cheese Focaccia until bread is toasted and cheese is melted.
Step 5
Slice the
Onions (2)

Sauté sliced onions in
Butter (1/2 cup)

Add
Fresh Spinach (7 1/2 cups)

Season with a pinch of
Ground Nutmeg (to taste)

Cayenne Pepper (to taste)
. Sauté until the spinach starts to wilt, add to a warm serving dish.

Plate the spinach and onions.

Add the
Eggs (to taste)
to simmering water, seasoned lightly with
Kosher Salt (to taste)
and
Distilled White Vinegar (to taste)
. Cook for 3 minutes or as you prefer.
Step 11
Plate the bread on top of the spinach.

Add the eggs and
Sweet Chili Sauce (to taste)
. Serve and enjoy!
