Brush Focaccia Bread (to taste) with Garlic Paste (to taste).
Grate the Asiago Cheese (to taste).
Sprinkle with grated asiago cheese, saving some for the spinach.
Toast the Garlic and Cheese Focaccia until bread is toasted and cheese is melted.
Slice the Onion (2).
Sauté sliced onions in Butter (8 tablespoon).
Add Fresh Spinach (0.5 pound).
Season with a pinch of Ground Nutmeg (to taste), Asiago Cheese (to taste), Kosher Salt (to taste) and Cayenne Pepper (to taste). Sauté until the spinach starts to wilt, add to a warm serving dish.
Plate the spinach and onions.
Add the Egg (to taste) to simmering water, seasoned lightly with Kosher Salt (to taste) and Distilled White Vinegar (to taste). Cook for 3 minutes or as you prefer.
Plate the bread on top of the spinach.
Add the eggs and Sweet Chili Sauce (to taste). Serve and enjoy!
