Step 1
Juice the
Lime (1)
into a mixing bowl. Finely grate the
Fresh Ginger (1 in)
using a micro-plane and add that to the same bowl.
Step 2
In a small bowl, mix together the lime juice, ginger,
Ground Cardamom (1/8 tsp)
, and
Pure Maple Syrup (1 tsp)
. Set the ginger lime dressing aside to let the flavors mellow and come together.
Step 3
Julienne or grate the
Beet (1)
. Keep the beet greens.
Step 4
Finely slice the beet greens (3 to 4 leaves or 1 cup).
Step 5
Roughly chop the
Fresh Cilantro (1/2 cup)
. Grate the
Carrots (2)
. Core and dice the
Apple (1)
.
Step 6
Place the carrots, apples, beets, chopped greens,
Golden Raisins (1/2 cup)
, and cilantro in a large bowl.
Step 7
Pour dressing over the salad ingredients and toss to coat.
Step 8
Serve topped with a good sprinkle of
Hemp Seeds (3 Tbsp)
and some extra raisins if you like as they add a nice sweetness. If you'd like, cut some
Tofu (to taste)
into cubes and toss it into your salad for an added dose of protein.
