Detox Salad and Ginger Lime Cardamom Dressing

It has a bit of sweetness from the raisins, carrots and apple, a little earthiness from the beets, a slight sour from the lime juice, and some zest from the ginger and cardamom. Add to that how colorful it is, healthy, nutritious, easy to make and so fresh…it’s a detox keeper!

Ingredients

1/8 teaspoon Ground Cardamom
1/2 cup Golden Raisins
3 tablespoon Hemp Seeds
to taste Organic Tofu

STEP 1
Juice the Lime (1) into a mixing bowl. Finely grate the Fresh Ginger (1 inch) using a micro-plane and add that to the same bowl.
STEP 2
In a small bowl, mix together the lime juice, ginger, Ground Cardamom (1/8 teaspoon), and Pure Maple Syrup (1 teaspoon). Set the ginger lime dressing aside to let the flavors mellow and come together.
STEP 3
Julienne or grate the Beet (1). Keep the beet greens.
STEP 4
Finely slice the beet greens (3 to 4 leaves or 1 cup).
STEP 5
Roughly chop the Fresh Cilantro (1/2 cup). Grate the Carrot (2). Core and dice the Apple (1).
STEP 6
Place the carrots, apples, beets, chopped greens, Golden Raisins (1/2 cup), and cilantro in a large bowl.
STEP 7
Pour dressing over the salad ingredients and toss to coat.
STEP 8
Serve topped with a good sprinkle of Hemp Seeds (3 tablespoon) and some extra raisins if you like as they add a nice sweetness. If you'd like, cut some Organic Tofu (to taste) into cubes and toss it into your salad for an added dose of protein.
