In a small bowl, mix together the lime juice, ginger, Ground Cardamom (as needed), and Pure Maple Syrup (1 tsp). Set the ginger lime dressing aside to let the flavors mellow and come together.

Julienne or grate the Beet (1). Keep the beet greens.

Finely slice the beet greens (3 to 4 leaves or 1 cup).

Roughly chop the Fresh Cilantro (1/2 cup). Grate the Carrots (2). Core and dice the Apple (1).

Serve topped with a good sprinkle of Hemp Hearts (3 Tbsp) and some extra raisins if you like as they add a nice sweetness. If you'd like, cut some Tofu (to taste) into cubes and toss it into your salad for an added dose of protein.
