You can use slaw mix and canned pineapple for convenience.

If you use fresh pineapple, peel the skin and make sure to clean it with salted water to remove the acidity that might make your mouth itchy.

In a medium mixing bowl, add Pineapple (1), Granulated Sugar (1 Tbsp), Crushed Red Pepper Flakes (1 tsp), and Salt (as needed). Mix to combine. Set aside in the refrigerator.

In a large mixing bowl, add Green Cabbage (1/2), Red Cabbage (1/4), and Salt (as needed). Mix to combine and set aside in the refrigerator.

Make the sauce in a small mixing bowl by combining Mayonnaise (1 cup), Rice Vinegar (3 Tbsp), Mirin (2 tsp), Honey (2 tsp), Fresh Mint (2 sprigs), Fresh Cilantro (1/4 bunch), Fresh Ginger (2 tsp), and Salt (as needed). Mix and combine well.

Squeeze the liquid out of the cabbages and place them in the large bowl. Then add pineapple mixture with liquid, Carrot (1/2), and sauce. Mix to combine.
