In a medium mixing bowl, add

Step 2
In a large mixing bowl, add
Green Cabbage (1/2)

Red Cabbage (1/4)

Salt (1/2 tsp)
. Mix to combine and set aside in the refrigerator.
Step 3
Make the sauce in a small mixing bowl by combining
Mayonnaise (1 cup)
,
Rice Vinegar (3 Tbsp)
,
Mirin (1/2 Tbsp)
,
Honey (1/2 Tbsp)
,
Fresh Mint (2 sprigs)
,
Fresh Cilantro (1/4 bunch)
,
Fresh Ginger (1/2 Tbsp)
, and
Salt (1/2 tsp)
. Mix and combine well.
Step 4
Squeeze the liquid out of the cabbages and place them in the large bowl. Then add pineapple mixture with liquid,
Carrot (1/2)
, and sauce. Mix to combine.
Step 5
Transfer to a serving plate. Garnish with fresh mint and grilled pineapple chunks (optional). Serve.
