Boneless, Skinless Chicken Breasts
Ground Black Pepper
Spoon out the flesh from each
, leaving some flesh on the skin as this will help them keep their shape during baking.
Into a bowl, add the avocado flesh. Squeeze
over the skins and also the flesh. Add
Fresh Chives (1 Tbsp)
Fresh Cilantro (1 Tbsp)
Salt (1/2 tsp)
Ground Black Pepper (1/2 tsp)
Sour Cream (1/4 cup)
. Mix well until smooth and creamy. Put aside.
Warm a nonstick pan and add
Olive Oil (as needed)
. Add the
Boneless, Skinless Chicken Breasts (2)
and sprinkle the
Taco Seasoning (1 Tbsp)
over the top. Mix well until brown and cooked through, about 4-5 minutes.
Take out the chicken and add it to the avocado mix. Stir through well.
Place the mixture into the skins. Place the skins on a baking tray and sprinkle with
Cheese (1 cup)
Place under a hot grill for 1-2 minutes, or until the cheese has melted and turned golden brown.
Serve immediately with more fresh chives and coriander or cilantro. Enjoy!
