Cooking Instructions

Spoon out the flesh from each Avocados (4), leaving some flesh on the skin as this will help them keep their shape during baking.

Into a bowl, add the avocado flesh. Squeeze Lime (1) over the skins and also the flesh. Add Fresh Chives (1 Tbsp), Fresh Cilantro (1 Tbsp), Salt (1/2 tsp), Ground Black Pepper (1/2 tsp), and Sour Cream (4 Tbsp). Mix well until smooth and creamy. Put aside.

Warm a nonstick pan and add Olive Oil (as needed). Add the Boneless, Skinless Chicken Breasts (2) and sprinkle the Taco Seasoning (1 Tbsp) over the top. Mix well until brown and cooked through, about 4-5 minutes.

Take out the chicken and add it to the avocado mix. Stir through well.

Place the mixture into the skins. Place the skins on a baking tray and sprinkle with Cheese (1 cup).

Place under a hot grill for 1-2 minutes, or until the cheese has melted and turned golden brown.

Serve immediately with more fresh chives and coriander or cilantro. Enjoy!
