Cooking Instructions

Step 1
Spoon out the flesh from each Avocados (4) , leaving some flesh on the skin as this will help them keep their shape during baking.
Step 2
Into a bowl, add the avocado flesh. Squeeze Lime (1) over the skins and also the flesh. Add Fresh Chives (1 Tbsp) , Fresh Cilantro (1 Tbsp) , Salt (1/2 tsp) , Ground Black Pepper (1/2 tsp) , and Sour Cream (1/4 cup) . Mix well until smooth and creamy. Put aside.
Step 3
Warm a nonstick pan and add Olive Oil (as needed) . Add the Boneless, Skinless Chicken Breasts (2) and sprinkle the Taco Seasoning (1 Tbsp) over the top. Mix well until brown and cooked through, about 4-5 minutes.
Step 4
Take out the chicken and add it to the avocado mix. Stir through well.
Step 5
Place the mixture into the skins. Place the skins on a baking tray and sprinkle with Cheese (1 cup) .
Step 6
Place under a hot grill for 1-2 minutes, or until the cheese has melted and turned golden brown.
Step 7
Serve immediately with more fresh chives and coriander or cilantro. Enjoy!
