Spoon out the flesh from each Avocados (4), leaving some flesh on the skin as this will help them keep their shape during baking.

Into a bowl, add the avocado flesh. Squeeze Lime (1) over the skins and also the flesh. Add Fresh Chives (1 Tbsp), Fresh Cilantro (1 Tbsp), Salt (1/2 tsp), Ground Black Pepper (1/2 tsp), and Sour Cream (1/4 cup). Mix well until smooth and creamy. Put aside.

Warm a nonstick pan and add Olive Oil (as needed). Add the Boneless, Skinless Chicken Breasts (2) and sprinkle the McCormick® Taco Seasoning Mix (1 Tbsp) over the top. Mix well until brown and cooked through, about 4-5 minutes.

Take out the chicken and add it to the avocado mix. Stir through well.

Place the mixture into the skins. Place the skins on a baking tray and sprinkle with Cheese (1 cup).

Place under a hot grill for 1-2 minutes, or until the cheese has melted and turned golden brown.

Serve immediately with more fresh chives and coriander or cilantro. Enjoy!
