Avocados , halved, pitted

•

Boneless, Skinless Chicken Breasts , diced

•

1 Tbsp

Fresh Chives , chopped

•

1 Tbsp

Fresh Cilantro , chopped

or Coriander

1/2 tsp

Salt

•

1/2 tsp

Ground Black Pepper

•

4 Tbsp

Sour Cream

•

1 Tbsp

Taco Seasoning

•

1 cup

Cheese , grated

•

Lime , juiced

•

Cooking Instructions

Spoon out the flesh from each Avocados (4) , leaving some flesh on the skin as this will help them keep their shape during baking.

Into a bowl, add the avocado flesh. Squeeze Lime (1) over the skins and also the flesh. Add Fresh Chives (1 Tbsp) , Fresh Cilantro (1 Tbsp) , Salt (1/2 tsp) , Ground Black Pepper (1/2 tsp) , and Sour Cream (4 Tbsp) . Mix well until smooth and creamy. Put aside.

Warm a nonstick pan and add Olive Oil (as needed) . Add the Boneless, Skinless Chicken Breasts (2) and sprinkle the Taco Seasoning (1 Tbsp) over the top. Mix well until brown and cooked through, about 4-5 minutes.

Take out the chicken and add it to the avocado mix. Stir through well.

Place the mixture into the skins. Place the skins on a baking tray and sprinkle with Cheese (1 cup) .

Place under a hot grill for 1-2 minutes, or until the cheese has melted and turned golden brown.

Serve immediately with more fresh chives and coriander or cilantro. Enjoy!
