Brown the 96/4 Lean Ground Beef (3 ounce) and season with Salt and Pepper (to taste). Set aside in a large bowl.
Dice the Onion (1/4).
Slice the Mushroom (1 handful).
Spray the same pan with Coconut Oil Cooking Spray (to taste) then sauté mushrooms at high heat until browned, 5-6 minutes. Set aside into the bowl of beef.
Spray pan again with coconut oil and sautee onion at medium-high heat until soft and slightly browned. Add Fresh Spinach (1 handful) and cook til wilted. Set aside into the bowl.
Crack Egg (3) into a small bowl, season with salt and pepper and whisk.
Spray pan with coconut oil and set over medium heat. Pour in eggs and let set, then stir to scramble. When soft scrambled, add meat and veggie mixture back to pan and stir to combine.
Serve with Avocado (to taste) and Salsa (to taste). Enjoy!
