Heat a nonstick frying pan over a medium heat and add Extra-Virgin Olive Oil (2 tablespoon). Let warm for 2 minutes.
Add the Garlic (4 clove) and Onion (1) and mix with the oil. Cook for 3 minutes.
Add the Green Bell Pepper (1/2) and mix well. Cook for 4 minutes.
Add the Canned Lima Beans (2 cup). Season with Sweet Paprika (1/4 teaspoon), Hot Smoked Paprika (1/4 teaspoon), Ground Cumin (1/2 teaspoon), and Sea Salt and Pepper (to taste). Mix everything together until well combined.
Stir in the Diced Tomatoes (1 can). Taste and adjust seasonings, then change temperature to low heat. Let simmer for 4-5 minutes, then remove from the heat.
Garnish with Fresh Chives (to taste). Enjoy!
