Step 1
Heat a nonstick frying pan over a medium heat and add
Extra-Virgin Olive Oil (2 Tbsp)
. Let warm for 2 minutes.
Step 2
Add the
Garlic (4 cloves)
and
Onion (1)
and mix with the oil. Cook for 3 minutes.
Step 3
Add the
Green Bell Pepper (1/2)
and mix well. Cook for 4 minutes.
Step 4
Add the
Canned Lima Beans (2 cups)
. Season with
Sweet Paprika (1/4 tsp)
,
Hot Smoked Paprika (1/4 tsp)
,
Ground Cumin (1/2 tsp)
,
Sea Salt (to taste)
, and
Ground Black Pepper (to taste)
. Mix everything together until well combined.
Step 5
Stir in the
Diced Tomatoes (1 can)
. Taste and adjust seasonings, then change temperature to low heat. Let simmer for 4-5 minutes, then remove from the heat.
Step 6
Garnish with
Fresh Chives (to taste)
