Spanish Beans with Tomato and Onions

This simple yet delicious combo is loaded with layers of flavors, easy and affordable to make, and done in less than 30 minutes. Pair with some crusty bread as an appetizer, or over rice for a complete meal!

Ingredients
- Serves 4 +

2 tablespoon Extra-Virgin Olive Oil
1 diced Onion
2 cup drained Canned Lima Beans
1/4 teaspoon Sweet Paprika
1/2 teaspoon Ground Cumin
1 can (400 gram) Diced Tomatoes
to taste Sea Salt and Pepper

STEP 1
Heat a nonstick frying pan over a medium heat and add Extra-Virgin Olive Oil (2 tablespoon). Let warm for 2 minutes.
STEP 2
Add the Garlic (4 clove) and Onion (1) and mix with the oil. Cook for 3 minutes.
STEP 3
Add the Green Bell Pepper (1/2) and mix well. Cook for 4 minutes.
STEP 4
Add the Canned Lima Beans (2 cup). Season with Sweet Paprika (1/4 teaspoon), Hot Smoked Paprika (1/4 teaspoon), Ground Cumin (1/2 teaspoon), and Sea Salt and Pepper (to taste). Mix everything together until well combined.
STEP 5
Stir in the Diced Tomatoes (1 can). Taste and adjust seasonings, then change temperature to low heat. Let simmer for 4-5 minutes, then remove from the heat.
STEP 6
Garnish with Fresh Chives (to taste). Enjoy!

Good flavor, I added a little more sweet smoked paprika and cumin to it. Served over chicken and rice.
