Makes 4-6 portions.

Optionally, skin the skum off the initial chicken broth to clear off the impurities, This will result in a clearer stock in the end.

We are removing the chicken meat early in the cooking process to avoid overcooking the meat. Feel free to leave the chicken in the pot the whole time though, just remove the whole chicken to make space for the matzo balls when they go in.

In a large pot, submerge the Whole Chicken (1) in water and season with a large pinch of Salt (to taste) and Black Peppercorns (1 Tbsp). Bring to a boil over high heat and let it cook for 20 minutes.

Once the chicken is cooked, remove it from the liquid and allow it to cool. As it cools, add the Celery (1 stick), Carrot (1), Parsnip (1), White Onion (1), Black Peppercorns (2 Tbsp), Fresh Dill (2 Tbsp), and Fresh Parsley (2 Tbsp) into the pot. Continue to cook on high for approximately 30 minutes or until the onions are translucent and soft.

When the chicken is cool enough to handle, shred the meat and reserve.

In a separate bowl, prepare the Matzo Meal mixture. Mix Eggs (4), Chicken Fat (4 Tbsp), Low-Sodium Chicken Broth (1/3 cup), Matzo Meal (2 cups), Baking Powder (1 tsp), White Onions (2 Tbsp),. Fresh Parsley (2 Tbsp), Fresh Dill (3 Tbsp), Salt (1 tsp), and Ground Black Pepper (1 tsp). Use the chicken broth you've prepared.

Shape the Matzo Meal mixture into balls.

Allow the Matzo balls to rest in the fridge for 20 minutes while the soup continues to cook.

Add the reserved shredded chicken and the Matzo Meal balls to the soup.

Let the soup simmer on low heat for an additional 30-40 minutes. To check if the Matzo Balls are done, cut one in half – it should be dense in the middle if fully cooked. Remove from heat.

Serve the Chicken Matzo Ball Soup by ladling it into bowls along with the Matzo Balls. Garnish with fresh dill and a sprinkle of black pepper.
