In a large mixing bowl, whisk together the All-Purpose Flour (2 cups), Baking Powder (2 tsp), Salt (as needed), Ground Ginger (2 tsp), Ground Cinnamon (2 tsp), Ground Allspice (as needed), and Ground Cloves (as needed).

In another large bowl, whisk the Whole Milk (1 cup), Plain Yogurt (1/3 cup), Eggs (2), Molasses (4 Tbsp), Butter (3 Tbsp), Dark Brown Sugar (2 Tbsp), Fresh Ginger (2 tsp), and Orange Zest (1) till well combined.

Add the wet ingredients to the dry ingredients, and stir gently to combine. Don’t over-mix.

Heat a frying pan lightly oiled with Sunflower Oil (1 Tbsp) over medium heat. With a ¼ cup cookie scoop, scoop the batter into the pan one ladle at a time. Cook until bubbles appear and edges set, about 2-3 minutes. Flip and cook until cooked through and slightly browned, about 1-2 minutes. Repeat until you finish all the batters.
