Step 1
In a large soup pot add
Olive Oil (1 Tbsp)
and
Chicken (3 lb)
over medium heat and let it sear for a few minutes.
Step 2
Add in the
Onion (1)

Garlic (3 cloves)
,
Ground Black Pepper (3/4 tsp)
,
Celery (2 stalks)
,
Scallions (1 bunch)
,
Fresh Thyme (4 sprigs)
,
Pimiento Peppers (2)
,
Guyana Peppers (2)
,
Carrot (1)
,
Potatoes (5)
,
Fresh Ginger (2 slices)
,
Whole Allspice (2)
and
Pumpkins (1 1/2 cups)
. Mix all the ingredients well.
Step 3
Pour in the
Chicken Stock (5 cups)
, set to stove to high heat and let it come up to a rolling boil. Remove any impurities that come up. Continue to boil for 30 minutes.
Step 4
Taste to adjust for
Salt (to taste)
. After boiling for 30 minutes, add the
Egg Noodles (to taste)
and let it boil for one more minute.
Step 5
Finish with
Fresh Parsley (3 Tbsp)
and
Lemon Juice (2 Tbsp)
