Chicken

Orange Juice , freshly squeezed
3/4 cup
Lime Juice , freshly squeezed
1/2 tsp
Ground Allspice
1/2 tsp
Ground Nutmeg , freshly ground
1/4 cup
Brown Sugar
1 tsp
Dried Thyme
1/2 Tbsp
Fresh Ginger , freshly grated
1/4 cup
Coconut Oil

Large Onion
1
Scallion
5 cloves
2
Scotch Bonnet Peppers
Habenero Pepper
to taste
Freshly Ground Black Pepper
to taste

Directions

Step 1
Chop the Onion (1) and Scallion (1) .
Step 2
Combine Unfiltered Apple Cider Vinegar (1/2 cup) , Orange Juice (1/2 cup) , Ground Allspice (1/2 tsp) , Kosher Salt (1 Tbsp) , Brown Sugar (1/4 cup) , Scotch Bonnet Peppers (2) , Freshly Ground Black Pepper (to taste) , Lime Juice (3/4 cup) , Dried Thyme (1 tsp) , Ground Nutmeg (1/2 tsp) , Garlic (5 cloves) , Fresh Ginger (1/2 Tbsp) , Coconut Oil (1/4 cup) , onion, and green onion.
Step 3
Blend together in a blender or food processor.
Step 4
Pour over the Shrimp (2 lb) and cover.
Step 5
Marinate for one hour or up to overnight.
Step 6
Assemble on a skewer with Pineapples (to taste) and grill to perfection.
