Chop the Onion (1) and Scallion (1).
Combine Unfiltered Apple Cider Vinegar (1/2 cup), Orange Juice (1/2 cup), Ground Allspice (1/2 teaspoon), Kosher Salt (1 tablespoon), Brown Sugar (1/4 cup), Scotch Bonnet Pepper (2), Freshly Ground Black Pepper (to taste), Lime Juice (3/4 cup), Dried Thyme (1 teaspoon), Ground Nutmeg (1/2 teaspoon), Garlic (5 clove), Fresh Ginger (2 teaspoon), Coconut Oil (1/4 cup), onion, and green onion.
Blend together in a blender or food processor.
Pour over the Shrimp (2 pound) and cover.
Marinate for one hour or up to overnight.
Assemble on a skewer with Pineapple (to taste) and grill to perfection.
