Cooking Instructions

Step 1
Wash Green Beans (6 cups) and remove the two ends and any imperfections.
Step 2
Bring about 2 inches of Water (3/4 cup) to a boil in a large pot. Add Salt (1 tsp) and the prepared green beans. Return to a boil, reduce heat, and cook for 2 minutes.
Step 3
Drain green beans and plunge them into an ice water bath to stop the cooking process and retain the bright green color of the beans. Drain, pat dry with paper towels, and set aside.
Step 4
In a large bowl, combine Water (1/4 cup) and Active Dry Yeast (1 tsp) . Let stand for 5 minutes.
Step 5
Add water (3/4 cup), Egg (1) , All-Purpose Flour (1 cup) , Salt (1/2 tsp) . Whisk for 30 seconds or until smooth.
Step 6
In a deep, heavy bottomed pot, heat Peanut Oil (as needed) between 350 degrees F (180 degrees C) and 370 degrees F (190 degrees C) and hold. Dip prepared green beans (about a dozen at a time) into batter and deep fry until golden.
Step 7
Drain the green bean fries on a paper towel lined plate. Continue in batches until all green beans are fried.
Step 8
Transfer Green Bean Fries from paper towels to a nice serving plate.
