Chop Roma Tomatoes (2), Red Onion (1/2), Jalapeño Pepper (1/2), and Fresh Cilantro (1 Tbsp).

Add to a bowl and squeeze the juice from the Lime (1/2). Add Salt (to taste) and Ground Black Pepper (to taste) to taste. Stir until combined.

Cube Potatoes (4) (can be peeled, I leave skin on) into bite size pieces and cook (in frying pan or on griddle). While potatoes are cooking, prepare Chorizo (5 oz) in separate pan. Once both have finished, combine.

While meat and potatoes are cooking, prepare Eggland's Best Organic Eggs (Brown) (6) mixture as if you were prepping scrambled eggs. Whisk 6 Eggland's Best eggs with a small amount of milk or water.

After combining potatoes and chorizo, pour egg mixture on top and cook on medium heat eggs have set - about 20-25 minutes. You can also transfer all ingredients to a casserole dish and bake at 350 degrees F (180 degrees C) again until eggs have set, usually 25-30 minutes.

Once eggs have set, top with 1/2 cup each of Shredded Cheddar Cheese (1/2 cup) and Shredded Mexican Cheese Blend (1/2 cup) and warm until cheese melts.

Top with Sour Cream (to taste), Jalapeño Peppers (to taste), pico de gallo, and sliced Avocados (to taste).
