In a large skillet with deep sides, heat the Olive Oil (1 dash) over medium-high heat. Brown the Chicken Sausage (24 ounce) for about 4-5 minutes.
Add in the Red Bell Pepper (1) and Onion (1). Let them get soft and fragrant for another couple of minutes while you season everything with the Cajun Seasoning (1 tablespoon) and Salt (1 pinch).
Stir in the Tomato Paste (2 tablespoon) and Chicken Stock (1 tablespoon). Let it simmer for 5 minutes.
Stir in the Frozen Cauliflower Rice (21 ounce) and let it warm through, cooking for 6-8 minutes while you keep stirring.
