To make the recipe even simpler, substitute the vegetables for a frozen vegetable medley. Sauté the medley to replace steps 3-5 and continue the remainder of the recipe.

Preheat oven to broil.

Heat a small (8-inch) nonstick, oven-safe skillet over medium heat. Add Unsalted Butter (1 Tbsp) and allow it to melt.

Add Red Bell Pepper (1) and Broccoli (4 Tbsp) to the skillet. Stir occasionally and cook for five to seven minutes until softened.

Add Scallions (2), Kosher Salt (1/4 tsp) and Simply Organic Black Pepper, Medium Grind (to taste) to the skillet. Stir and cook for one minute.

Add Fresh Spinach (1 cup) a handful at a time, stirring until wilted, about one to two minutes.

Whisk Eggland's Best Liquid Egg Whites (1 cup) in a bowl until slightly foamy.

Pour egg whites slowly over the vegetables. Do not stir—let the edges set until opaque white.

Sprinkle Shredded Cheddar Cheese (2 Tbsp) evenly over the top.

Move the skillet carefully to the oven and broil for two to three minutes, until the eggs puff up.
