In a bowl, combine Dijon Mustard (1/4 cup), Honey (1/4 cup), and Orange Marmalade (1/4 cup).
Preheat deep fryer with Vegetable Oil (to taste) to 375 degrees F (190 degrees C). Slice the Scallion (4). Dice the Sweet Onion (1/2) and Jalapeño Pepper (1/2).
In a large mixing bowl, combine Cornmeal (1 cup), Self-Rising Flour (3/4 cup), Granulated Sugar (1/2 teaspoon), Salt (1 teaspoon), and Cayenne Pepper (1/2 teaspoon).
Add sliced green onions, diced onion, diced jalapeno, Shredded Cheddar Cheese (1/4 cup), and Corn (1/2 cup).
Add Egg (1) and Buttermilk (1 cup). Mix well and set aside.
Form small balls with wet hands and fry for 3 to 4 minutes or until golden and brown.
Remove and drain on a paper towel lined plate. Work in batches.
Serve with dipping sauce and enjoy!
