In a large pot filled with cold water, add Red Potato (1.5 pound). Bring the pot to a boil and cook potatoes for about 35 minutes, or until fork-tender.
While the potatoes cook, in a large bowl, combine Mayonnaise (1 cup), Garlic (1 clove), Lemon Juice (1 tablespoon), Celery (2 stalk), Red Onion (1/2), Fresh Parsley (1/4 cup), Tarragon (1 tablespoon), Salt and Pepper (to taste).
Once the potatoes are cooked, drain and set them aside to cool. Once cooled, add them to the mayo mixture bowl.
Serve with Bacon (6 slice) on top and enjoy!
