Preheat oven to 350 degrees F (180 degrees C).
Spray a 24 mini muffin tin and set aside.
Using an electric mixer, beat your Granulated Sugar (2 tablespoon), Brown Sugar (1/2 cup) and Egg (1). Add in the Almond Milk (1/3 cup), Apple Sauce (1/4 cup) and Vanilla Extract (1 teaspoon).
Stir in your All-Purpose Flour (1 cup) and Baking Powder (1 teaspoon). Mix well, then gently fold in the Fresh Strawberry (1/2 cup) and Mini Chocolate Chips (2 tablespoon).
Fill your muffin tin almost to the top with the mixture.
Bake in oven for 18 to 20 minutes. Enjoy!
