Step 1
Add Water (2 cups) to a mixing bowl, along with a small sprinkle of flour and Instant Dry Yeast (1 Tbsp) . Mix together using a stand mixer until the yeast and flour have more or less dissolved.
Step 2
Add All-Purpose Flour (4 cups) to the bowl and mix for 1 minute.
Step 3
Add Himalayan Rock Salt (2 Tbsp) and remaining All-Purpose Flour (2 1/3 cups) . Mix to combine all of the ingredients and turn the dough into a ball. When it starts to form, it will become much noisier as the ball hits the sides of the mixer. That's how you know the dough is ready.
Step 4
Prepare a mixing bowl by drizzling some Extra-Virgin Olive Oil (as needed) in it and basting it around the sides, then place the ball of pizza dough inside. Using your hands, knead the dough inside the bowl, covering it with the oil and forming a round ball.
Step 5
Cover the bowl with plastic wrap, making sure to leave no gaps. Let it rest for around 2 hours, then place it in the fridge for 18-24 hours to grow.
Step 6
Remove the dough from the bowl and place it on a chopping board. Stretch it out, then cut it in half.
Step 7
Create small pizza balls, each weighing about 250 grams. Don’t overwork them, just enough to make them round, and then move them onto a tray dusted with flour.
Step 8
Gently cover the dough balls with a tea towel and leave them to rest for at least 1 hour.
Step 9
Preheat your oven to 500 degrees F (600 degrees C).
Step 10
Baste a cast-iron pan with additional Extra-Virgin Olive Oil (as needed) , as this will help prevent the pizza from sticking. Place the pan on the stove over high heat.
Step 11
Get one of your pizza balls, place it on a surface dusted with flour, and coat both sides of the dough with the flour. To stretch out the pizza, starting from the middle, poke down using both hands, and work it in a circular motion, leaving a gap for your crust. Turn it over, and stretch it just a little bit, or try your hand at a little spin and stretch in the air if you dare!
Step 12
Turn the heat down on the stove and place the pizza in the pan, stretching it out just enough so that it fits.
Step 13
Spread some Tomato Sauce (to taste) on top, leaving space for the crust around the edges. Place Mozzarella Cheese (to taste) over the pizza, along with a generous sprinkle of Grated Parmesan Cheese (to taste) and a drizzle of Extra-Virgin Olive Oil (as needed) .
Step 14
Cook for 3-4 minutes. Move the pizza around every so often by lifting the pan and turning it in a circular motion so it shifts around and doesn’t stick to the bottom. Add Fresh Basil Leaves (3) .
Step 15
Move the pan to your oven. Be sure to leave the oven door open! Cook the pizza under the broiler until it gets golden and crispy, about 5-8 minutes.
