Slice the Yellow Onion (1). Preheat oven to 500 degrees F (260 degrees C).
Bring a pan to medium-high heat with Olive Oil (2 tablespoon). Add the onions, and turn the heat to low. Stir regularly over low heat until caramelized. This can take up to 40 minutes.
While the onions caramelize, make the dough by mixing together the All-Purpose Flour (1 cup), Vegetable Oil (1 1/2 tablespoon), Water (1/2 cup), and a Salt (1 pinch). Knead well, adding additional flour until the dough is not at all sticky.
In a small bowl make the sauce by mixing the Fat-Free Greek Yogurt (1/4 cup), Balsamic Vinegar (2 tablespoon) and Horseradish (1 tablespoon).
Slice the Fig (6). Place baking sheet in the oven to heat up.
When the onions are ready, remove from the pan and set aside. Now roll out your dough on a large piece of floured parchment paper, getting it as thin as possible without breaking.
Remove the hot baking sheet from the oven, sprinkle with Breadcrumbs (as needed) and transfer the dough to the sheet as quickly as possible.
Quickly layer the sauce, onions, figs and Goat Cheese (2 ounce).
Bake for 15 minutes, or until golden brown and crispy. Garnish with Fresh Parsley (to taste).
