Preheat oven to 400 degrees F (200 degrees C).
Drizzle the Winter Squash (1/2) with Olive Oil (to taste), sSalt and Pepper (to taste) and roast in oven till fork tender, about 10-15 minutes.
Tear the Beet Greens (to taste), Fresh Spinach (to taste), Microgreens (to taste), and Kale (to taste) and combine.
Dice up Pear (1) and Apple (1/2).
Combine roasted squash with diced apples and diced pears.
Drizzle with oil and vinegar and serve.
