Preheat oven to 400 degrees F (200 degrees C).
Winter Squash (1/2)
Olive Oil (as needed)
Salt (to taste)
Ground Black Pepper (to taste)
and roast in the oven till fork-tender, about 10-15 minutes.
Beet Greens (to taste)
Fresh Spinach (to taste)
Microgreens (to taste)
Kale (to taste)
Combine roasted squash with diced apples and diced pears.
Drizzle with oil and vinegar and serve.
