Mushrooms , sliced

Large Green Bell Pepper , sliced

Large Red Chili Peppers , sliced

Large Orange Bell Pepper , sliced
Yellow Pepper
1 Tbsp
Ground Cumin , ground
1 Tbsp
Chili Powder
1/2 tsp
1/2 tsp
Cayenne Pepper
4 cups
Alfalfa Sprouts
Cilantro, Parsley, (Any Green Topping of Your Choice!)
to taste
Vegan Cheese , grated
1 Tbsp
Coconut Oil
to taste

Salsa

Guacamole
to taste
Vegan Sour Cream

Directions

Step 1
Heat a very large skillet over medium-high heat. Once hot, add Coconut Oil (1 Tbsp) to the large skillet.
Step 2
Add the Garlic (1 clove) , Onion (1) , and Mushrooms (4 cups) to the pan and cook until the mushrooms are slightly browned. Season generously with Salt (1/2 tsp) .
Step 3
Add in the Green Bell Pepper (1) , Red Chili Peppers (2) , and Orange Bell Pepper (1) . Add Ground Cumin (1 Tbsp) and Chili Powder (1 Tbsp) .
Step 4
Cook until all vegetables are softened, stirring often. Add in your Cayenne Pepper (1/2 tsp) and Ground Black Pepper (1 tsp) to taste and mix.
Step 5
Warm Flour Tortillas (12) in the microwave or oven.
Step 6
Serve tortillas with Alfalfa Sprouts (4 cups) , topped with mushroom pepper medley, Vegan Cheese (to taste) , and Sriracha (to taste) , or other toppings, such as Salsa (to taste) , Guacamole (to taste) , or Vegan Sour Cream (to taste) .
Step 7
Garnish with Limes (to taste) and enjoy!
