Preheat oven to 360 degrees F (180 degrees C).
Roughly chop Carrot (2) into quarters.
Roughly chop Yellow Onion (1) into quarters.
Peel and crush Garlic (4 clove) with a knife.
Slice Lemon (1) into roughly six pieces.
Stuff inside of Whole Chicken (1) with lemon, large garlic clove, and Fresh Thyme (1 bunch). Scatter carrots and onions on roasting tray around chicken.
Drizzle top of chicken liberally with Extra-Virgin Olive Oil (to taste).
Season with Freshly Ground Black Pepper (to taste) and Salt (to taste).
Place in oven for an hour and a half, or until cooked through. Every 500 grams of chicken will need about 30 minutes in the oven.
Transfer to a serving plate and surround the chicken with roasted veggies. Enjoy!
