Step 1
Preheat oven to 350 degrees F (180 degrees C). Grease muffin pan lightly with coconut oil/butter. Break up the
Dark Chocolate Chunks (1 cup)
using a rolling pin.
Step 2
In a bowl, combine
Chocolate Milk (1 cup)
,
Apple Sauce (1 cup)
,
Eggs (7)
, and
Vanilla Extract (1 Tbsp)
.
Step 3
In a separate bowl, mix together
Whole Wheat Flour (2 cups)
,
Brown Sugar (1 cup)
,
Baking Soda (3 Tbsp)
,
Unsweetened Cocoa Powder (1 cup)
,
Protein Powder (1/2 cup)
and
Chia Seeds (2 Tbsp)
.
Step 4
Slowly add the wet ingredients to the dry while continuing to stir. Mix until smooth. Add the dark chocolate chunks and stir roughly.
Step 5
Fill each muffin cup ¾ of the way full. Cook for 20-25 minutes or until you can stick a toothpick in the center and remove it without any of the muffin sticking to it.
Step 6
Sprinkle
Coarse Sugar (to taste)
on the muffins to garnish. Enjoy!
