Preheat oven to 350 degrees F (180 degrees C). Grease muffin pan lightly with coconut oil/butter. Break up the Dark Chocolate Chunks (1 cup) using a rolling pin.
In a bowl, combine Chocolate Milk (1 cup), Apple Sauce (1 cup), Egg (7), and Vanilla Extract (1 tablespoon).
In a separate bowl, mix together Whole Wheat Flour (2 cup), Brown Sugar (1 cup), Baking Soda (3 tablespoon), Unsweetened Cocoa Powder (1 cup), Protein Powder (1/2 cup) and Chia Seeds (2 tablespoon).
Slowly add the wet ingredients to the dry while continuing to stir. Mix until smooth. Add the dark chocolate chunks and stir roughly.
Fill each muffin cup ¾ of the way full. Cook for 20-25 minutes or until you can stick a toothpick in the center and remove it without any of the muffin sticking to it.
Sprinkle Coarse Sugar (to taste) on the muffins to garnish. Enjoy!
