Cauliflower Crust Pizza

Recipe

This Cauliflower Pizza Crust is a great alternative to the cream cheese-heavy fathead version when you’re on a low-carb pizza hunt. Bake the crust and then add toppings of choice! We went with prosciutto and some spicy arugula. Make it a weekend project with your kids and have them make their own pizza!

step 1
Preheat the oven to 425 degrees F (220 degrees C). Line a baking sheet with parchment paper or a silicone baking mat.
step 2
Place the Cauliflower (1/2 head) in the food processor and pulse until finely ground.
step 3
In a microwave-safe bowl, cook the cauliflower in a microwave oven for 4 to 5 minutes, until soft. Transfer to a clean kitchen towel and let cool. Once cooled, squeeze the towel in order to wring out as much of the excess moisture as possible.
step 4
In a bowl, mix the Cauliflower, Egg (1), Shredded Mozzarella Cheese (1/2 cup), Grated Parmesan Cheese (2 Tbsp), and the Italian Seasoning (1 tsp) until combined.
step 5
Transfer the dough to the baking sheet. Form it into a ½-inch thick circle (or desired shape) and bake for 15 minutes, until golden.
step 6
Brush the crust with Extra-Virgin Olive Oil (2 tsp). Top with Marinara Sauce (2 Tbsp), the remaining Mozzarella Cheese (1/2 cup), and any toppings you want to bake. Bake for 5 minutes, until the cheese is melted and bubbling.
step 7
Meanwhile, toss the Arugula (2 cups) with the remaining Olive Oil (2 tsp) and season with a pinch of Salt (to taste) and Freshly Ground Black Pepper (to taste).
step 8
Remove the pizza from the oven and top with arugula, Prosciutto (4 slices), and Parmesan Cheese (1 Tbsp) or other toppings of choice. Slice and serve.
