Vegan Sausage Rolls

This recipe is great as a holiday finger food, but also doubles as a great snack that can be made well in advanced, and heated up when you need a meal in a flash. Easy to make and easy to eat. The “sausage” in this vegan sausage roll is made from a combination of seitan meat and raw nuts.

2 tablespoon Lemon Juice
2 tablespoon Olive Oil
1/2 teaspoon Salt
2 tablespoon Water
3/4 Walnut
1/4 cup Breadcrumbs
1 cup finely chopped Mushroom
1 teaspoon Vegan Beef Stock Powder
1/4 teaspoon Smoked Paprika
1 teaspoon Soy Sauce
1/2 cup finely chopped Seitan
1 Puff Pastry
to taste Non-Dairy Milk

STEP 1
Take the Puff Pastry (1) out of the freezer and let defrost in the fridge overnight.
STEP 2
Blend the Raw Almonds (2/3 cup), Lemon Juice (2 tablespoon), Olive Oil (2 tablespoon), Garlic (1 clove), Salt (1/2 teaspoon) and Water (2 tablespoon) in a food processor until smooth.
STEP 3
Add the Walnut (3/4) and pulse until they are chopped (not totally smooth).
STEP 4
Add the Breadcrumbs (1/4 cup) , Yellow Onion (1) , Garlic (2 clove), Mushroom (1 cup), Vegan Beef Stock Powder (1 teaspoon), Smoked Paprika (1/4 teaspoon), Soy Sauce (1 teaspoon) , Ground Black Pepper (1/4 teaspoon), Seitan (1/2 cup).
STEP 5
Process until well combined. You can leave some texture, but the consistency is up to you. Set aside.
STEP 6
Preheat oven to 425 degrees F (220 degrees C) and line a baking sheet with parchment paper.
STEP 7
Remove your puff pastry from the fridge and roll out into a rectangle, cut in half so you have two triangles.
STEP 8
Lightly brush the border with the Non-Dairy Milk (to taste) .
STEP 9
Spoon the filling lengthwise down the long side of the puff pastry triangle.
STEP 10
Roll the dough over the "sausage meat" and secure with milk as glue.
STEP 11
Brush the top of the roll with milk and sprinkle with Sesame Seeds (to taste) .
STEP 12
Place on parchment paper-lined baking sheet and cook in the oven for 10-15 minutes, or until golden brown.
STEP 13
Serve and enjoy!
