Step 1
Preheat the oven to 350 degrees F (180 degrees C). Grate the
Mozzarella Cheese (2 cups)
. Peel and slice and soak
Eggplant (1)
in salted water.
Step 2
Spray the bottom of a large cup muffin pan with
Nonstick Cooking Spray (as needed)
. Sprinkle the bottom of each muffin cup with a teaspoon of
Parmesan Cheese (1 cup)
.
Step 3
Add a slice of eggplant.
Step 4
Sprinkle another teaspoon of Parmesan and a little mozzarella cheese over each eggplant slice.
Step 5
Repeat layers until all is full, ending with mozzarella.
Step 6
Melt
Butter (1/4 cup)
. Whisk together
Eggs (3)
and melted butter. Pour egg mixture evenly into each muffin cup. Push the eggplant and cheese down a little to mix the egg mixture evenly through the layers.
Step 7
Bake at 350 degrees F (175 degrees C) for approximately 30 minutes; or until muffins are puffy and lightly brown. During this time you can heat the marinara sauce (to taste).
Step 8
Serve with
Marinara Sauce (to taste)
and enjoy!
