This unique muffin recipe was inspired by a mouth-watering, moist, perfectly sweet and tart lemon-ginger muffin served at a small coffee shop in Atlanta's Hartsfield airport. In this recipe, we've taken advantage of the sweetness and great flavor of fresh peaches, combined with the fresh, kicky taste of ginger.

Whole Wheat Flour
or Coconut Sugar
Preheat oven to 350 degrees F (180 degrees C).
Whole Wheat Flour (3 cups)
Baking Powder (1/2 Tbsp)
Baking Soda (1 tsp)
Salt (1 tsp)
into a mixing bowl and mix together.
Butter (1/2 cup)
Sucanat (1 cup)
Buttermilk (1 1/2 cups)
Vanilla Extract (1/2 Tbsp)
Fresh Ginger (1/4 cup)
in a mixing bowl or measuring bowl and mix together well.
Add the wet ingredients to the dry ingredients and mix well (by hand is fine) until thoroughly mixed together.
Fill prepared muffin tins half way with batter. Hollow out a little hole in the batter in each muffin cup. Put a teaspoon of
Peach Preserves (1/3 cup)
into each muffin cup. Spoon batter over the top of each, filling almost to the top.
Bake for 18-20 minutes.
