Put Eggs (2), Butter (1/2 cup), Sucanat (1 cup), Buttermilk (1 1/2 cups), Vanilla Extract (1/2 Tbsp), and Fresh Ginger (1/4 cup) in a mixing bowl or measuring bowl and mix together well.

Add the wet ingredients to the dry ingredients and mix well (by hand is fine) until thoroughly mixed together.

Fill prepared muffin tins half way with batter. Hollow out a little hole in the batter in each muffin cup. Put a teaspoon of Peach Preserves (1/3 cup) into each muffin cup. Spoon batter over the top of each, filling almost to the top.
