Step 1
Preheat oven to 350 degrees F (180 degrees C).

Put
Whole Wheat Flour (3 cups)

Baking Powder (1/2 Tbsp)

Baking Soda (1 tsp)

Salt (1 tsp)
into a mixing bowl and mix together.
Step 3
Put
Eggs (2)

Butter (1/2 cup)
,
Sucanat (1 cup)
,
Buttermilk (1 1/2 cups)
,
Vanilla Extract (1/2 Tbsp)
, and
Fresh Ginger (1/4 cup)
in a mixing bowl or measuring bowl and mix together well.
Step 4
Add the wet ingredients to the dry ingredients and mix well (by hand is fine) until thoroughly mixed together.
Step 5
Fill prepared muffin tins half way with batter. Hollow out a little hole in the batter in each muffin cup. Put a teaspoon of
Peach Preserves (1/3 cup)
into each muffin cup. Spoon batter over the top of each, filling almost to the top.
Step 6
Bake for 18-20 minutes.
