Cherry Tomato Confit

Confit ( pronounced: con-FEE ) is a cooking technique where food is slow-cooked in liquid. In this case, cherry tomatoes get slow-cooked in a bath of olive oil along with garlic, rosemary, thyme, and salt. The process renders them into soft, luscious little jewels that literally melt in your mouth.

Ingredients

3 cups
Cherry Tomatoes

1/2 cup
Extra-Virgin Olive Oil
•
3 cloves
Garlic
•
3 sprigs
Fresh Rosemary
•
5 sprigs
Fresh Thyme
•
to taste
Sea Salt Flakes

Cooking Instructions

1. 
Preheat oven to 250 degrees F (120 degrees C).
2. 
Then, fill a baking pan with the Cherry Tomatoes (3 cups) . Add the Extra-Virgin Olive Oil (1/2 cup) , Garlic (3 cloves) , Fresh Rosemary (3 sprigs) , and Fresh Thyme (5 sprigs) .

Sprinkle the pan contents generously with Sea Salt Flakes (to taste) . Cook, uncovered for 2-3 hours until the tomatoes are swollen and the skins are wrinkled.
4. 
Let tomatoes cool to room temperature and transfer to a jar, if storing for later.
5. 
If serving immediately, let the tomatoes cool to room temperature and then enjoy!
