step 1
Season the Pork Chops (4) with Salt (to taste) and Ground Black Pepper (to taste). Rub seasoning in until it coats the meat.
step 2
In a cast-iron skillet over medium-high heat, add Olive Oil (4 tsp). Once hot, add the seasoned pork chops and sear for about 3 minutes, or until the meat is golden brown, then flip. (Time will vary based on thickness - add an extra minute for thicker chops).
step 3
Add Garlic (4 cloves), Butter (2 tsp), and Fresh Thyme (4 sprigs). Continue cooking for about 3 more minutes or until the meat is cook through.
step 4
Once the pork chops are cooked, remove them from the pan to rest, along with the thyme and garlic.
step 5
Lower heat to medium, then add the remaining Butter (2 tsp) the Red Onion (1) to the same pan. Stir until butter is melted, then add the Granny Smith Apple (1) and Fuji Apple (1).
step 6
Add Brown Sugar (4 Tbsp), Salt (to taste), Ground Black Pepper (to taste), Apple Cider Vinegar (2 Tbsp), and Vegetable Broth (4 Tbsp) to the same skillet. Continue cooking until the brown sugar caramelizes 5-7 minutes. Make sure to get up all of the browned bits stuck to the bottom of the pan.
step 7
Once the apples are caramelized add the pork chops back to the pan. Let everything simmer for 2-3 minutes, using a spoon to baste the pork chops with the sauce.
step 8
Remove the Pork Chop with Caramelized Apple and Onion from the heat and garnish with Fresh Parsley (1 tsp), then serve.
