Step 1
Season the
Pork Chops (4)
with
Salt (to taste)
and
Ground Black Pepper (to taste)
. Rub seasoning in until it coats the meat.
Step 2
In a cast-iron skillet over medium-high heat, add
Olive Oil (1 1/2 Tbsp)
. Once hot, add the seasoned pork chops and sear for about 3 minutes, or until the meat is golden brown, then flip. (Time will vary based on thickness - add an extra minute for thicker chops).
Step 3
Add
Garlic (4 cloves)
,
Butter (1/2 Tbsp)
, and
Fresh Thyme (4 sprigs)
. Continue cooking for about 3 more minutes or until the meat is cook through.
Step 4
Once the pork chops are cooked, remove them from the pan to rest, along with the thyme and garlic.
Step 5
Lower heat to medium, then add the remaining
Butter (1/2 Tbsp)
and the
Red Onion (1)
to the same pan. Stir until butter is melted, then add the
Granny Smith Apple (1)
and
Fuji Apple (1)
.
Step 6
Add
Brown Sugar (1/4 cup)
,
Salt (to taste)
,
Ground Black Pepper (to taste)
,
Apple Cider Vinegar (2 Tbsp)
, and
Vegetable Broth (1/4 cup)
to the same skillet. Continue cooking until the brown sugar caramelizes 5-7 minutes. Make sure to get up all of the browned bits stuck to the bottom of the pan.
Step 7
Once the apples are caramelized add the pork chops back to the pan. Let everything simmer for 2-3 minutes, using a spoon to baste the pork chops with the sauce.
Step 8
Remove from heat and garnish with
Fresh Parsley (1 tsp)
, then serve.
