How To Prepare Pork Chops

  • Take the pork chops out of the fridge a few minutes before cooking, let them come to room temperature. Rub the chops with salt and ground black pepper generously.
  • Using a cast-iron skillet, heat up cooking oil at medium-high heat. Sear the chops until golden brown on each side. The searing time depends on the thickness of your pork chops, our half-inch chops took about 3 minutes on each side.
  • Add in your herbs and butter and cook until the meat is fully done, then transfer the pork chops to a shallow dish. Using the same pan, caramelize the apples and onions.

How To Prepare Caramelized Apples And Onions

Using the same pan, decrease the heat, add butter, and throw in sliced red onions. Stir continuously until the butter is fully melted. Add both types of apples into the pan. Stir in and proceed to add brown sugar, salt, ground black pepper, apple cider vinegar, and vegetable broth. Continue cooking until you get good caramelization. It took us about 5-7 minutes. Don’t forget to scrape the bottom to get all the tasty brown bits.

When the apples and onions are caramelized, you’re ready to assemble this vibrant pork chop dish. Put pork chops cooked with thyme and garlic back in the pan and let it simmer for a couple of minutes. Add more flavor to the pork chops basting the sauce over them. Step 1
Season the Pork Chops (4) with Salt (to taste) and Ground Black Pepper (to taste) . Rub seasoning in until it coats the meat.
Step 2
In a cast-iron skillet over medium-high heat, add Olive Oil (1 1/2 Tbsp) . Once hot, add the seasoned pork chops and sear for about 3 minutes, or until the meat is golden brown, then flip. (Time will vary based on thickness - add an extra minute for thicker chops).
Step 3
Add Garlic (4 cloves) , Butter (1/2 Tbsp) , and Fresh Thyme (4 sprigs) . Continue cooking for about 3 more minutes or until the meat is cook through.
Step 4
Once the pork chops are cooked, remove them from the pan to rest, along with the thyme and garlic.
Step 5
Lower heat to medium, then add the remaining Butter (1/2 Tbsp) the Red Onion (1) to the same pan. Stir until butter is melted, then add the Granny Smith Apple (1) and Fuji Apple (1) .
Step 6
Add Brown Sugar (1/4 cup) , Salt (to taste) , Ground Black Pepper (to taste) , Apple Cider Vinegar (2 Tbsp) , and Vegetable Broth (1/4 cup) to the same skillet. Continue cooking until the brown sugar caramelizes 5-7 minutes. Make sure to get up all of the browned bits stuck to the bottom of the pan.
Step 7
Once the apples are caramelized add the pork chops back to the pan. Let everything simmer for 2-3 minutes, using a spoon to baste the pork chops with the sauce.
Step 8
Remove the Pork Chop with Caramelized Apple and Onion from the heat and garnish with Fresh Parsley (1 tsp) , then serve.
