Step 1
Preheat oven to 350 degrees F (180 degrees C). Prepare a large oven pan and spray well with
Nonstick Cooking Spray (as needed)

Step 2
Heat large pan with oil and add
Red Onion (1/2)
. Cook for about 3-5 minutes.
Step 3
Add minced
Garlic (2 cloves)
and cook for 30 seconds to 1 minute more (stirring)
Step 4
Add
Canned Black Beans (2 1/3 cups)
,
Canned Corn (1/4 cup)
, and
Salt (to taste)
and
Ground Black Pepper (to taste)
. Cook for 3-5 minutes.
Step 5
Add
Broccoli (1 cup)
and
Taco Seasoning (1 tsp)
. Cook for 2 minutes.
Step 6
Add
Carrots (1 cup)
and
Fresh Cilantro (1/2 cup)
stir, and remove from heat.
Step 7
Heat the
Butter (2 Tbsp)
in a pan stirring constantly! Once melted, add
All-Purpose Flour (2 Tbsp)
and stir constantly - over medium to low heat. Once smooth add
Milk (3 1/3 cups)
and continue to constantly stir - turn to low heat.
Step 8
When mixed, add
White Cheddar Cheese (1 2/3 cups)
,
Taco Seasoning (1 Tbsp)
,
Fresh Cilantro (1/2 cup)
,
Jalapeño Peppers (1/2 Tbsp)
, and stir constantly until smooth. This all happens in just 3-5 minutes!
Step 9
In a large pan spread out your
Tortilla Chips (14 cups)
. Add your veggie mix to your cheese mix and stir well. Put in oven for about 10 minutes. Put on your desired platter and squeeze the
Lime (1/2)
or pour the lime juice over the nachos.
Step 10
Throw on the
Guacamole (to taste)
, cilantro and
Scallions (1/2 cup)
. Serve and enjoy!
