Cooking Instructions
1.
Add the Cauliflower (1/2) to the Thermomix jug and blend on speed 5 for 5 seconds. Pour cauliflower rice into a bowl and set aside.
2.
Add the Carrot (1/2), Garlic (1 clove), and white part of the Scallion (2) to the Thermomix and blend on speed 5 for 5 seconds.
3.
Heat the Sesame Oil (2 tablespoon) in a wok over a low heat and add the carrot, garlic and scallion mixture. Stir fry until fragrant, about 5 minutes.
4.
Add the cauli rice and Edamame (1/4 cup) beans and stir fry quickly for around 3 minutes.
5.
Make a well in the middle of the wok and add the Egg (1). Stir until the egg is scrambled and then mix into the rest of the cauliflower rice.
6.
Stir in Light Soy Sauce (1 tablespoon) and stir fry for another minute.
7.
Place in a bowl and top with finely sliced scallion greens. Serve and enjoy!
