Step 1
In a large slow cooker, add the Yellow Onion (1) , Carrots (4) , Celery (4 stalks) , Garlic (4 cloves) , Chicken Stock (8 cups) , Boneless, Skinless Chicken Breasts (2) , Bay Leaves (2) , Dried Thyme (1 tsp) , and Dried Rosemary (1 tsp) . Season with Salt and Pepper (to taste) . Cook on low for 6-8 hours.
Step 2
Remove the chicken breasts and chop or shred with two forks. Add back into the slow cooker.
Step 3
Add in Egg Noodles (8 oz) and stir together. Making sure the noodles are submerged in the liquid. Recover the slow cooker and cook for another 5-10 minutes on low until the noodles are just tender.
Step 4
When the egg noodles are cooked, stir in the Lemon (1/2) and Fresh Parsley (3 Tbsp) . Serve and enjoy!
