Preheat the oven to 400 degrees F (200 degrees C). Line a large baking sheet with parchment paper. Set aside.

Place Red Potatoes (3 cups), Bell Pepper (1), and Yellow Onion (1) in a large bowl or Ziploc bag. Add the Olive Oil (2 Tbsp), Smoked Paprika (as needed), Italian Seasoning (1 tsp), Garlic Powder (1 tsp), and juice from Lemon (1). Toss until veggies are thoroughly coated.
step 2 Place Red Potatoes (3 cups), Bell Pepper (1), and Yellow Onion (1) in a large bowl or Ziploc bag. Add the Olive Oil (2 Tbsp), Smoked Paprika (as needed), Italian Seasoning (1 tsp), Garlic Powder (1 tsp), and juice from Lemon (1). Toss until veggies are thoroughly coated.

Spread seasoned veggies evenly on the prepared baking sheet. Season with Kosher Salt (to taste) and Freshly Ground Black Pepper (to taste).

Remove pan from oven and flip veggies and sausage over, then place back into the oven for an additional 15-17 minutes, or until sausage reaches an internal temperature of 165 degrees F (75 degrees C).
