Step 1
Preheat the oven to 400 degrees F (200 degrees C). Line a large baking sheet with parchment paper. Set aside.
Step 2
Place Red Potatoes (3 cups) , Bell Pepper (1) , and Yellow Onion (1) in a large bowl or Ziploc bag. Add the Olive Oil (2 Tbsp) , Smoked Paprika (1/2 tsp) , Italian Seasoning (1 tsp) , Garlic Powder (1 tsp) , and Lemon Juice (1/2 Tbsp) . Toss until veggies are thoroughly coated.
Step 3
Spread seasoned veggies evenly on the prepared baking sheet. Season with Kosher Salt and Freshly Ground Black Pepper (to taste) .
Step 4
Place Mild Italian Sausage Links (1 lb) in between the veggies.
Step 5
Bake at 400 degrees F (200 degrees C) for 15 minutes.
Step 6
Remove pan from oven and flip veggies and sausage over, then place back into the oven for an additional 15-17 minutes, or until sausage reaches an internal temperature of 165 degrees F (75 degrees C).
Step 7
Remove pan from oven. Serve with Fresh Parsley (to taste) .
